One of the challenges of parenting is trying to think of new meal ideas. You can always go with the classic cereal and milk for breakfast. But if you’re looking to change things up, there are only so many times I can do pancakes and waffles (especially when I’m not in the mood to clean up the extra dishes).
If you’re looking to change things up and add a little whimsy (or if it’s April Fools Day), try a “sunny side up egg and toast.” Of course, it’s really yogurt, apricot (or peach), and pound cake.
The first time I make this for my kiddos, they absolutely freaked out. At first, they didn’t know what they were going to eat. Once they figured out it they loved it. This is especially a great way to vary up yogurt. My kiddos love yogurt, and this gives them an additional piece of fruit (which they don’t always love).
The best part is it’s super easy to make. It’s also a great way to innocently prank your kids this April Fools Day.

Ingredients
- 1 cup yogurt (I went with some whole milk vanilla. It’s supposed to be the “egg white” so pick something you like that’s white. Regular or Greek works)
- 1 can of apricot halves (you can also use peach halves. I use them to make ostrich eggs – more on this later)
- Pound cake (home made or store bought)
Directions
How to Make the “Fried Egg”
- Spoon about 1/2-3/4 cup of the yogurt onto a plate (this isn’t baking so you don’t need to measure.)

- Take one of the apricot halves and place it in the middle of the yogurt, dome side up.

Ostrich Egg Variation
If you want to increase the prank level, you can tell your kids that you got a special ostrich egg at the store. You make it the same way, but with some more yogurt and a peach half.

Pound Cake “Toast”
- To make the toast, slice up your pound cake into about 1/2 in. slices.

- Place it in the toaster on the lowest setting and keep a close eye on it. The pound cake can very quickly burn because of the sugar in the cake (I definitely burned the first batch when I got distracted for 3 seconds to answer a question).
